Predominantly, we focus on the production of native grape varieties, such as refošk/refosco and Istrian malvasia, which are also the most popular wines in this area.
We produce about 80,000 bottles of premium quality wine per year. In case of exceptional vintages, we also bottle rehoboam bottles (4.5 liters), in which the best wine from the Santomas cellar—Grande cuvée—is then aged.
The Santomas brand offers two premium wine ranges, enabling both the wine lover and the wine connoisseur to find something to their taste.
Since 2000, Santomas winery has collaborated with French enologist Claude Gross, who is employed as an external consultant. Together with our chief enologist Uroš Bolčina, they coordinate the process of typification, staying on top of the wine trends and cutting-edge industry practices in Slovenia and abroad.
Uroš Bolčina brought a fresh take on winemaking to Santomas, intertwining our long-standing tradition with his state-of-the-art approach. His bold, original innovations enriched and refreshed our whole wine collection.
Santomas wines are sustainably produced as we adhere to the principles of integrated production of grapes. Our holistic approach with minimal use of sulfur yields organic, biodynamic wines.
Currently, we cultivate 25 ha (about 62 acres) of vineyards in various locations in Slovenian Istria. Each location has its own characteristics (soil, altitude, humidity, proximity to the sea, sun exposure, etc.), which results in unique microclimate and thus ensures the specific character of the crop from each location. What all vineyards have in common is flysch, sandy soil, and the magical influence of the Mediterranean.
The vineyards range in age from 10 to 50 years old. The grape vines reach about 70 cm in height and are trained according to the Guyot system (single and double guyot). With the distance between individual vines being 70 to 100 centimeters, the approximate planting density is about 4,000 vines per hectare.
At Santomas winery, we mostly grow the native varieties of Slovenian Istria – refošk/refosco and Istrian malvasia. Among the international varieties in our vineyards, you will find merlot, cabernet sauvignon and syrah.

At the Santomas estate, we can also organize lunch or dinner with a guided tasting of our wines. We organize receptions for business partners, concerts, or private gatherings, as well as smaller seminars and congresses.
